Sousvide cowboy steak and potatoes

SousVide and mashed potatoes. For this cook I used the @kitchenboss_sousvide G320. This specific product gets the temperature up quickly and maintains that temperature extremely well. You can hardly tell it’s even working since it’s so quite.

I started off by cooking my potatoes first, I added 2lbs of Yukon gold potatoes cubed up with 3/4 cup unsalted butter, 2 garlic cloves minced, 3/4 cup milk and kosher salt. I cooked those for 2 hours at 195 degrees. I then seasoned my generously with salt pepper garlic, 2 tbsp butter, 3 garlic cloves and some fresh thyme. I cooked it at 129 degrees for 3 hours. I added my potatoes back with the steak to keep them warm for the last 30 min. Once my steak came out, I patted it dry and seared it to perfection on my charcoal grill. About 1 min per side. The potatoes were nicely combined and garnished with chives.

  18. Just did 2 ribeyes over the weekend 2" thick. One reverse sear the other sous vide for 4 hours. The sous vide steak was so tender. I can't wait to do it again
