Hi everyone! Today we are making two delicious veggie filled recipes! Great if you love veggies and great if you don’t and you are just trying to get some more in, perfect for kids too!

INGREDIENTS (please do not copy and post elsewhere thank you)

NACHOS
1 yellow zucchini, sliced (about 9 ounces/260g)
1 cup frozen or fresh broccoli florets (about 3.2 ounces/90g)
About 10 tortilla chips (28g)
1/2 bell pepper (about 3 ounces/90g), chopped
2/3 cup frozen corn (3 ounces/85g)
1/8 cup vegan cheese shreds (14g)
2.5 ounces vegan chorizo (70g)
1/3 cup lettuce, (about .5 ounces/20g), shredded
1/3 beefsteak tomato (about 3.5 ounces/100g), chopped
2 tablespoons cashew fiesta dip (30g)
3 tablespoons nondairy milk (45ml)
1 tablespoon vegan sour cream
Spray oil
Tajin

CHICKPEA BITES
1 (15.5 ounce/439g) can chickpeas, drained and rinsed
2 carrots (about 3 ounces/85g)
1 bell pepper (about 7.5 ounces/215g)
1 (14.1 ounce/400g) can artichoke hearts, drained
1/2 red onion (about 2.5 ounces/70g)
3 cloves garlic
Few sprigs parsley
1 1/2 cups chickpea flour (180g)
1/4 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon nutritional yeast
9 tablespoons breadcrumbs (85g)

Dipping Sauce
1 cup spinach (about 45g)
2/3 cup vegan yogurt (about 5 ounces/150g)
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/4 cup (60ml) nondairy milk
